SUPERPOWER SALADS
Saturday, Feb 23rd @ 10am at Peaceful River Farm
Who ever said salads have to be boring? Get out of your salad rut and discover new new salad recipes chock-full of fresh herbs, nourishing dressings, flavorful sauces, and vibrant color + crunch at this demonstration-style workshop at Peaceful River Farm. In addition to demonstrating several creative salad recipes, in this workshop, we will cover topics like "superfoods", cooking with grains and legumes, herbs, knife skills, and solutions to prevent food waste. Following the demonstration, guests will enjoy a farm tour and a hearty tasting of a colorful array of salads, sauces, and more!

SPRING SOUPS & SALADS
Thursday, March 7th @ 6:30pm at Midway Community Kitchen
Get inspired by the colors and flavors of spring! This 100% hands-on class features an engaging knife skills lesson, cooking with herbs 101, how to make homemade vinaigrettes (without needing a recipe), as well as mastering the art of making healthy, nourishing, and flavor-filled soups. If you're looking for the inspiration and confidence to cook vibrant, nourishing meals in the new year, then this is the class for you! Together we will make two colorful, seasonal salads and one delicious soup, using all local produce from our area’s best farmers, which we will all enjoy during a seated dinner after cooking together.

Spring Farmers’ Market Salad with Sugar Snap Peas, Radishes & Fennel with Pistachios & Lemon Vinaigrette
Roasted Beet & Quinoa Salad with Walnuts & Orange-Za’atar Vinaigrette
Green Goddess Vegetable Dip

PICKLING & FERMENTING
Thursday, March 21st @ 6:30pm at Midway Community Kitchen
Master the art and learn the science behind Quick Pickling and Fermenting! This is a hands-on class with an emphasis on knife skills, as you'll learn about knife selection, honing/sharpening, and proper technique (all while creating your own jars of Quick Pickles and Sauerkraut)! You'll walk away from this class with awesome new skills, a detailed recipe packet, and bellies full of freshly pickled + fermented goodness.
Ticket includes all ingredients, materials, recipe packed, a pint-sized jar of pickled vegetables, a pint-sized jar of sauerkraut, and heaps of fermented farm fresh snacks to enjoy throughout the class.

COOKING WITH HERBS
Thursday, March 28th @ 6:30pm at Midway Community Kitchen
Learn everything you've ever wondered about HERBS with farmer and chef Michelle Aronson, of Farmbelly! During this class, we will dig into everything from herb identification to proper storage techniques, the difference between dried vs fresh herbs, as well as a hands-on knife skills lesson so you can master how to properly chop herbs and incorporate them into your dishes. Together we will make an herb-filled spring tabbouleh salad, roasted vegetables with chimichurri sauce, as well as homemade compound herb butter. This class is 100% hands-on, and it's a great way to get inspired to cook with fresh herbs as we head into spring.
Ticket includes all ingredients, materials, recipe packet, and a delicious herb-filled vegetarian meal to end the class.
